Joanna Gaines' Raspberry-Chipotle Pork Tenderloin

Alright everyone, it's time for the 4th recipe out of my First Impressions Series feating the cookbook Magnolia Table by Joanna Gaines!I chose this recipe because it seemed super easy and straight forward to cook. And of course, I love me a good pork meal. I did however have to order the required sauce on Amazon (I’ll link it HERE) because they did not carry it at my local grocery store (Safeway). Amazon only had a pack of three, so I was hoping the meal was good enough for me to remake it again and use up all this sauce I now have. Step One: In a medium bowl, combine the raspberry chipotle sauce, soy sauce, honey, garlic, garlic salt, and garlic powder. Add the pork tenderloin and cover with mixture evenly. Cover the bowl and refrigerate to marinade for 6 to 8 hours. I only had time for about 5 hours. 

Step Two: Preheat your grill to medium-hot. Oil the grill grate with vegetable oil. I like to use a cast iron skillet (just make sure you scrape/clean it right away when you're done while it's still hot). If using cast iron skillet, make sure to preheat the skillet in the grill as well, but make sure it’s not scorching hot.

Step Three: Remove the pork from the marinade and place it on the grill or cast iron skillet. Generously brush the marinade onto the pork and discard the rest. Grill the tenderloin until it reaches 145 degrees on an instant read thermometer, for about 15 minutes. Use grill durable tongs to rotate quarterly every 3 minutes.

Step Four: Transfer to cutting board and let rest for 15 minutes before slicing to let the juices soak in. Slice crosswise and serve.

Final Thoughts: This recipe was super easy and full a flavor. Even my husband really liked it and he’s not the biggest fan of pork tenderloin. I think the biggest flavor factors of this meal was that it was marinated for such a long time and was cooked on the grill. Those two components really helped this meal develop fantastic flavors. This was the fourth meal I tried out of this Joanna Gaines’ cookbook, Magnolia Table, and it was the first meal my husband and myself would consider cooking again. I defiantly would recommend giving this Raspberry-Chipotle Pork Tenderloin a try. Comment below if you have tried this meal, I would love to hear your thoughts on it!

4 garlic cloves, finely chopped
