Joanna Gaines' Beef Stew

My husband defiantly lives up to his Irish roots when it comes to obsessively loving beef and potatoes, so picking this beef stew to make was right up his alley. I’m not gonna lie to ya, I'm not the biggest beef fan but I figured I’d give this a whirl. Chrissy Teigen has a beef stew in her second cookbook called Sleepy Time Stew and it’s the freaking bomb. So what the hey, let’s give it a try. 

Step One: Season the beef with salt and pepper lightly. Heat the butter over medium-high heat in a large soup pot until the foam subsides. Add in the beef and sauté it until the beef is browned on all sides for about 10 minutes.

Step Two: Add the chopped carrots, onions, and celery and sauté for about 10 minutes until the vegetables are tender but not fully cooked. Add in the flour, garlic powder, garlic salt and 1 teaspoon each of kosher salt and pepper and stir. Cook for about 1 to 2 minutes, stirring occasionally, until well combined. 

Step Three: Add the broth, corn and its liquid, tomatoes, and potato. Add up to 1 cup water if needed to ensure all ingredients are submerged. Bring pot to a boil over medium-high heat. Reduce the heat to a simmer, cover and cook until the potatoes and meat are nice and tender for about 1 hour and 15 minutes.

Step Four: Add in the frozen peas and simmer, uncovered, for 5 to 10 minutes. until the peas are cooked but still nice and bright. Ladle stew into bowls and serve with cornbread if desired. Leftovers are good in an air locked container for up to 5 days.

Final Thoughts:

This stew was pretty easy and very straight forward to cook. It had nice flavor and the beef was nice and tender. I’m not gunna lie though, I’m not a big beef person. But my husband totally is, and he thought it was good. With that said, it was good but not blow-your-mind great. I defiantly would recommend giving it a try and see for yourself! But if I had to choose/recommend between this recipe and Chrissy Teigen’s “Sleepy-Time Stew” out of her second cookbook, I defiantly would choose Chrissy Teigen’s!

1 pound beef stew meat, cut into 1 ½ inch chunks 

kosher salt and freshly ground black pepper 

4 tablespoons (1/2 stick) salted butter

1 white onion, cut into ¼-inch dice

3 celery stalks, cut into ¼-inch dice

4 carrots, peeled and cut into ¼- inch dice

¼ cup all-purpose flour

1 tablespoon garlic powder

1 tablespoon garlic salt

1 32-ounce box beef broth

1 14.5- ounce can fire-roasted diced tomatoes

1 14.4-ounce can gold and white corn, such as Del Monte, undrained

1 large russet potato, scrubbed and cut into ¾-inch cubes

1 cup frozen peas
