Chrissy Teigen's Chicken Lettuce Wraps

This is one of my go-to recipes from the Cravings cookbook by Chrissy Teigen. Once you make it, it becomes pretty straight forward to quickly whip together. And ALWAYS a crowd favorite! P.F. Changs has NOTHING on this! 

Ingredient Note: Some of the ingredients in this recipe might be new to some of you, but I promise they are worth it! The great thing about this cookbook is that these ingredients are used in many different recipes throughout the book so they won’t go to waste in your fridge. 

Step one: Prep/chop all your veggies and get your wet ingredients out and ready. Prepping all your ingredients before hand is key! TIP:: A hand food chopper works great to get your mushrooms nice and finally chopped. Mix together the sriracha, vegetable oil, sesame oil, unseasoned rice vinegar, soy sauce, sweet Thai chili sauce, hoisin sauce, ginger and garlic. 

Step Two: Add two tables of the sauce mixture to the ground chicken, mix and cook in a large skillet. Remove onto a separate plate when finished cooking. Add the green onion whites, garlic and ginger and sauté for 1 minute. Add more vegetable oil if needed. Next, add the mushrooms and cook for 3 minutes till the liquid releases. Then add red pepper, water chestnuts, cooked ground chicken and sauce mixture to the skillet. Cook about 3-4 more minutes, remove from heat and stir in green onions. 

REMEMBER: Clean as you go! Rinse all dirty dishes and put them in your dishwasher as your chicken cooks. Try to keep your counters and sink as clear as possible and all ingredients needed in sight, ready for show time. Newbie cookers- this helps with stress and time management! 

Step Three: Wash butter lettuce thoroughly and spread onto a plate. Add mixture to each lettuce cup and WA-LA! Delicious chicken lettuce cups!

Sauce:

  • 3 Tablespoons Hoisin Sauce

  • 3 Tablespoons Thai Sweet Chili Sauce

  • 3 Tablespoons Light Soy Sauce 

  • 2 Tablespoons Sriracha 

  • 2 Tablespoons Vegetable Oil

  • 1 ½ Tablespoons Unseasoned Rice Vinegar 

  • 1 Teaspoon Sesame Oil

  • 1 Tablespoon Mined Ginger

  • 4 Cloves of Garlic, Minced

Filling:

  • 1 Pound of Ground Chicken

  • 3 Tablespoons Vegetable Oil

  • 8 Scallions, Thinly Sliced w/ Whites and Greens Separated

  • 2 Cloves of Garlic, Minced

  • 1 Tablespoon of Minced Ginger

  • ½ Pound of White Mushrooms, Finely Chopped

  • 1 Small Red Pepper, Finely Chopped

  • ½ Cup Water Chestnuts, Finely Chopped

  • 2 Heads Butter Lettuce, Cleaned and Leaves Separated
